Plum-Cake

Grandmas always know it right when it comes to cakes! This is the recipe for the plum cake that my grandma uses. It is quite easy to bake and the result is very tasty!


Ingredients
  • Flour 300g.
  • Sugar 200g.
  • Eggs 4.
  • Butter 150g.
  • Milk (one glass ~ 200ml).
  • Cake yiest (1 bag).
  • Vanilla extract.
  • Lemon zest (optional).

Cooking time: 30 min + 40 min (baking)

Preparation:

  1. Break the eggs in a large bowl, add the sugar and mix until uniform.
  2. Put the butter and the milk in a small pot heat it up until it melts. Don’t let the milk get too hot, otherwise it will cook the egg once added to it!
  3. Add the flour to the egg-sugar mix. Whenever the mix gets too dense, add the the milk with butter melt in it. Keep going until all the flour and milk have been used.
  4. Add the yiest and the vanilla extract. You can add cocoa powder or lemon zest, feel free to experiment! If you are adding cocoa powder, you can also add some more sugar, to compensate for the cocoa bitterness.
  5. Put the mix in a baking tray, aiming at having about 5cm of mixture form the bottom of the container. Cook in the oven for about 40 minutes at $180^o$.

Important note: Once the mix is in the oven, don’t open it for at least 25 minutes. Otherwise you will disturb the raising process and the cake will not inflate.
