Frittata Sandwich

Sanwiches are a life saviour when you are eating outside. They are easy to pack, they properly fill you and you can be etremely creative with what you fill them with. One of my favourite combinations is Sandwich with Frittata, a recipe that only requires a few ingredients but that never disappoints you.

A frittata is an open omelette, that optionally can be filled with cooked vegetables or cheese. Let see how to make a sanwich with the latter variant!


Ingredients
  • Bread (your own favourite).
  • Eggs 2.
  • Olive oil.
  • Salt.
  • Meltable cheese (optional).

Cooking the Frittata

Unsurprisingly cooking the frittata is one of the hardest part of the recipe. Here are the steps!

  1. First of all, open the two eggs and pour the content into a glass or a cup. Add a pinch of salt and use a fork to mix the egg, until the albumen and yolk give an uniform mixture.
  2. (optional) If the cheese you are using is not already soft, then it may be a good idea to grate it or chop it in smaller pieces, so that it melts quicker.
  3. Heat up a pan with some olive oil. The oil gives flavour and it makes so that the frittata doesn’t stick to the surface of the pan.
  4. Try and tilt the pan, if the oil runs smoothly like if it was wather, then the pan is hot and you are ready to add the frittata mixture.
  5. Cook the frittata for some time on one side and occasionally check with a spatula if it lifts up. Carefully use the spatula to lift all the parts of the frittata, that may be stuck to the surface of the pan.
  6. We now flip the frittata. Turn the fire off. Put a lid (alternatively, a dish) on top of the pan, lift it up and quickly flip it over so that now the uncooked side of the frittata lays on the lid’s surface. Place the pan back on the cooking hob and slide the frittata from the lid to the pan, then turn the fire back on.
  7. At this point you can add the cheese to the surface of the frittata, if you wish.
  8. Once the frittata is satisfactorily cooked, fold it so that it fits your sandwitch.
  9. Let it rest in the bread for a 5 minutes before packing it into your reusable lunch box.
